Method
In large saucepan, heat oil over medium heat. Add onion and cook, stirring often, until onions are soft, about 4 minutes. Add garlic, chili powder, oregano and paprika, and jalapeño, if using; cook, stirring often, for 1 minute. Add sweet potato and green pepper; toss to coat well. Season with salt and pepper. Add tomatoes, crushing with back of spoon and scraping up browned bits from bottom of pan. Add lentils, corn and broth; bring to boil. Reduce heat, cover and simmer until sweet potato is tender, about 15 minutes. Serve with toppings, if using.
