SUNDAY: SPRING PRIMAVERA PASTA WITH GOAT CHEESE
A little milk and flour make a luscious, creamy sauce without the addition of whipping cream or too much cheese. Look for nutty spelt pasta in the organic or gourmet section of your supermarket, or substitute with whole wheat.

MONDAY: DOUBLE MOZZARELLA AND SPINACH PITA PIZZAS
Store-bought whole wheat pitas make quick and easy pizza crusts, perfect for time-pressed weeknight meals. If your kids don't like spinach, top the pizzas with diced sweet red pepper or their favourite veggies.

This recipe can easily be doubled to serve a larger crowd, making it ideal for a brunch buffet. Use your favourite sausage and serve with chili sauce or ketchup on the side.
