Method
Roasted Red Pepper & Olive Relish In skillet, heat oil over medium-low heat. Add onion; cook, stirring occasionally, for 3 minutes. Add garlic; cook, stirring often, for 2 minutes. Add roasted red peppers and olives; cook, stirring occasionally, for 2 minutes. Add vinegar and sugar; season with salt and pepper and cook, stirring often, until liquid has almost completely evaporated, about 5 minutes. Set aside.
Harissa Yogurt In bowl, stir together yogurt, harissa, sour cream, lemon juice and mint. Season with salt and pepper; set aside.
Burgers Preheat barbecue to medium heat (about 350°F); grease grill.
Cut both blocks of halloumi lengthwise into 4 slices, to create a total of 8 rectangular pieces. Pat halloumi dry with paper towel. Place halloumi and ciabatta buns on grill, with lid open, and cook, turning halfway through grilling time, until cheese is grill-marked and buns are toasted, 4 to 6 minutes.
Spread bottom halves of buns with reserved Harissa Yogurt and top each with lettuce, fresh mint and 2 slices of grilled halloumi. Top with reserved Roasted Red Pepper & Olive Relish and top halves of buns.
