Method
Season pork chops with salt and pepper. In skillet, heat 2 tsp of the oil over medium heat. Add pork chops and cook, turning halfway through cooking time, until just slightly pink inside, about 5 minutes. Transfer to plate and loosely tent with foil.
In same skillet, heat remaining oil over medium heat. Add apples, ginger, garlic and thyme; cook, stirring often, for 2 minutes. Add chicken broth, apple juice and cider vinegar. Bring to boil over medium-high heat. Reduce heat to medium; simmer, scraping browned bits from bottom of pan with wooden spoon, until cooking juices have reduced slightly and apples are tender, about 4 minutes. Season with salt and pepper.
Return pork chops to skillet. Coat with apple mixture and heat through for 1 minute.
