Sweet golden onions and fresh herbs jazz up plain eggs for dinner. Serve with a simple green salad and a loaf of great crusty bread for an easy dinner any night.

Method
In ovenproof or cast-iron skillet, heat oil over medium heat; cook onions, thyme, salt and pepper, stirring occasionally, until onions are tender and golden, about 10 minutes.
Meanwhile, in bowl, beat eggs; stir in parsley. Pour over onion mixture; reduce heat to medium-low and cook until bottom and side are set but top is still slightly runny, about 10 minutes.
Broil until top is golden and set, about 3 minutes. Cut into wedges.
Change it up: Golden Onion and Gruyère Frittata
Reduce salt to 1/4 tsp. Sprinkle top with 1/3 cup shredded Gruyère cheese just before broiling.
