Mascarpone Cream In bowl, using electric mixer on high speed, whip egg whites until stiff peaks form, 3 to 4 minutes. Set aside.
In separate bowl, using electric mixer on high speed, beat egg yolks with granulated and maple sugars until mixture whitens slightly, 2 to 3 minutes. Fold in mascarpone until well combined. Gently fold in egg whites.
Assembly Prepare 6 dessert cups. Break ladyfinger cookies in half. In deep plate, mix espresso and maple liqueur.
One at a time, lightly dip 3 ladyfinger halves into espresso mixture and place in bottom of dessert cup. Repeat with remaining cookies and dessert cups. Add 1/4 cup Mascarpone Cream to each cup. Repeat layers with remaining ladyfinger halves and Mascarpone Cream. Sprinkle with maple flakes. Cover dessert cups with plastic wrap and refrigerate for at least 2 hours before serving.
