Method

In blender, purée watermelon, peppers, cucumber and onion until smooth. Season with salt and pepper. Strain, if desired. Refrigerate for at least 1 hour. (Make-ahead: Can be refrigerated overnight.) 

Divide gazpacho among 6 bowls. Top with yogurt and chopped herbs. Season with pepper, if desired.
