Turmeric Sauce
In small bowl, combine Date Purée, vinegar, plant-based cream (if using), turmeric and curry powder. Season with salt and pepper. Set aside.
Vegetable Stir-Fry
In large skillet, heat oil over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add garlic and vegetables; cook, stirring, until vegetables are tender-crisp, 8 to 10 minutes.
Add reserved Turmeric Sauce and toss vegetables to coat well. Heat for 1 minute.
