Method
Preheat oven to 375°F. Line baking sheet with parchment paper. In saucepan, bring maple syrup to boil and cook until reduced by half, about 5 minutes. Remove saucepan from heat. Add nuts; toss to coat well.
Spread nuts in single layer on prepared baking sheet; bake for 10 minutes.
Meanwhile, in small bowl, combine salt, hot pepper flakes, paprika, cardamom, coriander and cayenne pepper.
Remove nuts from oven and sprinkle with spice mixture; toss to coat well. Return to oven; bake until nuts are golden brown, 5 minutes. Let cool completely. (Make-ahead: Can be stored in airtight container at room temperature for up to 1 week.)
