In large skillet or wok, heat 1 tbsp of the oil over high heat. Add three-quarters of the green onions, and red pepper; cook, stirring often, until tender-crisp, about 2 minutes. Add ginger and garlic; continue cooking, stirring constantly, for
1 minute. Transfer to plate: set aside.
In bowl, combine tofu, cornstarch, pepper, five-spice and salt; toss to coat well. In skillet, heat remaining oil over medium-high heat. Add tofu and cook, stirring occasionally, until golden and crispy, about 8 minutes. Mix in reserved vegetable mixture. Sprinkle with remaining green onions. Serve with bok choy and rice noodles, if desired.
