In bowl, combine crème fraîche, butter, shallot, garlic and thyme; season with salt and pepper. Add potato slices and toss to coat well.
Preheat oven to 400°F. In 4 greased muffin cups, stack potato slices. Cover with foil and bake about 30 minutes. Remove foil; continue cooking until potatoes are tender and golden, 10 to 15 minutes. Let cool for 5 minutes before unmoulding.
