Method

In saucepan over medium heat, bring vegetable broth to boil. Remove from heat; let cool for 5 minutes.

Stir in couscous, almonds, pine nuts, dates, raisins and garam masala; season with salt and pepper. Cover and let stand for 10 minutes. Fluff couscous with fork and top with chopped parsley; serve with lemon wedges and Eggplant & Chickpea Stew.
