Method
In food processor or blender, purée cucumbers, pineapple, ginger and mint with 4 cups cold water, lime juice and maple syrup. Strain mixture through fine sieve placed over pitcher. Refrigerate until ready to serve. (Make-ahead: Can be refrigerated for up to 2 days.)
Just before serving, pour agua fresca into glasses filled with ice cubes. Add gin, if using, and stir to combine. Garnish with a few cucumber slices and mint sprigs.
