Method
Soup In large saucepan, melt butter over medium heat. Add beets and apples; cook, stirring occasionally, for 10 minutes. Add broth and bay leaf; bring to boil. Reduce heat to medium-low, cover and simmer until beets are tender, about 30 minutes. In blender or using handheld blender, purée beet mixture until smooth. Strain, if desired. Season with salt and pepper, if desired. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days or frozen for up to 3 months.)
Toppings Meanwhile, in skillet, cook bacon over medium heat, stirring occasionally, until crisp, about 5 minutes. Using slotted spoon, remove bacon from pan; discard bacon fat. Return bacon to skillet, add apple and walnuts and cook, stirring often, for 2 minutes. Add maple syrup and stir to coat ingredients well. Remove skillet from heat.
Divide soup among bowls. Top with dollop of sour cream, bacon mixture and fresh thyme leaves, if desired.
