Method
In skillet, heat oil over medium heat. Add onion and red pepper; cook for 2 minutes. Add soy protein and chili powder; cook, stirring often, for 3 to 4 minutes. Set aside.
Preheat oven to broil. On baking sheet, arrange half of each of the tortilla chips, soy protein mixture, corn and black beans. Spoon half of the salsa over top. Repeat with remaining chips, soy protein, corn and black beans; top with cheese. Broil until cheese is melted and starting to brown, 1 to 2 minutes. Sprinkle with green onions and serve with remaining salsa, and avocado and sour cream, if using.
