Place nuts in bowl; set aside. In small saucepan, bring sugar, salt, cayenne and 1/4 cup (50 mL) water to boil over medium heat; boil for 2 minutes. Pour over nuts.In skillet, heat oil over medium-high heat; fry nut mixture, stirring constantly, until light golden, about 3 minutes. Drain in sieve. Scatter on large plate or parchment paper; let cool. Separate any nuts stuck together. (Make-ahead: Cover and store in airtight container for up to 2 weeks.)
