In wok, heat oil over high heat; stir-fry tomato, white parts of green onions, garlic and ginger for 1 minute.Add mushrooms, carrot, celery and red pepper; stir-fry until vegetables are tender-crisp, about 4 minutes.
Stir in rice, beef, peas, soy sauce and oyster sauce; stir-fry for 3 minutes. Remove from heat. Stir in green parts of green onions and sesame oil.
