Method
Pork Dumplings In bowl, mix pork, cabbage, garlic, ginger, soy sauce, sesame oil, hoisin and cilantro until combined.
Place dumpling wrappers on large parchment paper-lined baking sheet. Place a small bowl of water close by.
In centre of wrapper, place about 2 1/2 tsp pork mixture. Using fingers, moisten edge of wrapper with water and fold to close wrapper, pressing edges together to adhere. Place dumpling on plate. Repeat with remaining wrappers and pork mixture; set aside.
Soup In saucepan, heat oil over medium heat. Add garlic, ginger and curry paste; cook, stirring often, for 2 minutes. Add white parts of bok choy and broth; bring to boil. Reduce heat to medium; stir in coconut milk, fish sauce and brown sugar until combined. Carefully add reserved dumplings; simmer until cooked through, about 5 minutes.
Stir in green parts of bok choy. Divide among bowls and top with red onion and Thai basil, if using. Serve with lime wedges, if using.
