In large pot, melt butter over medium heat. Cook garlic, leeks, onion, salt and pepper, stirring occasionally, until softened, about 6 minutes. Stir in potato and 1/2 cup water, scraping up browned bits.
Add broth; bring to boil. Reduce heat to medium-low; simmer until potato is almost tender, about 8 minutes.
Remove 1 cup of the potato mixture. Using immersion blender, blend soup until smooth. Return reserved potato mixture to pot. Stir in kale; cook until softened, about 4 minutes.
Divide among bowls; top with cheddar, green onions and bacon (if using).
Test Kitchen Tip: For more texture, remove half of the soup instead of just a cup of the potato mixture; blend the soup remaining in the pot. Return the reserved soup to the pot; stir in the kale and continue with the recipe.
