Method
In large saucepan, heat oil over medium heat. Add onion and carrots; cook, stirring often, for 5 minutes. Stir in garlic and ginger; cook, stirring often, for 2 minutes. Stir in hot pepper flakes, broth, sweet potatoes and 1 cup water; bring to boil. Reduce heat to medium-low; cook, covered, until sweet potatoes are very tender, 15 to 20 minutes. Season with salt and pepper. Stir in cream.
Using handheld blender, purée soup. Divide among bowls; sprinkle with pistachios and thyme, if using.
