Method
In large ovenproof skillet, heat oil over medium heat. Add sausage; cook, stirring occasionally, 2 to 3 minutes. Add leek, garlic, oregano and bay leaf; cook, stirring, 1 minute. Add wine; cook, scraping up brown bits from bottom of pan with wooden spoon, 2 minutes. Add broth, potatoes, tomatoes and tomato paste. Season with salt and pepper. Bring to boil. Reduce heat to medium-low; simmer until potatoes are tender but still slightly firm, 15 to 20 minutes.
Preheat oven to 350°F. Add fish to skillet; transfer to oven. Cook until fish flakes easily when tested with fork, about 12 minutes. Remove and discard bay leaf. Serve stew with toasted baguette,
if desired.
