In bowl, toss shrimp with Cajun seasoning (add more seasoning, if desired).
In saucepan, heat 1 tbsp of the oil over medium-high heat; add shrimp and cook, turning halfway through cooking time, about 2 minutes. Set aside on plate.
In same saucepan, heat remaining oil. Add onion, garlic and thyme; cook, stirring occasionally, for 2 minutes. Add celery, pepper and paprika; cook, stirring occasionally, until celery and pepper have softened, about 5 minutes. Stir in tomato paste; cook, stirring constantly, for 2 minutes. Stir in broth, corn and potato, scraping up browned bits from bottom of pan with wooden spoon; season with salt and pepper. Bring to boil, reduce heat to medium-low and simmer, covered, stirring occasionally, until potatoes are tender, 20 to 25 minutes. Stir in reserved shrimp and the parsley; cook until heated through, 2 to 3 minutes.
