"I had to make up a quick batch when I had to feed a bunch of hungry guys pronto after we poured concrete!" she says. "It is ready really fast." She improvises, too, adding canned beans or chili sauce from the pantry to accommodate a crowd.

Method
In large skillet, heat oil over medium-high heat; cook onion, stirring occasionally, for 5 minutes or until softened. Add beef; cook, breaking up with spoon, for about 5 minutes or until no longer pink. Drain off any fat.
Add Cajun seasoning and tomatoes; bring to boil. Reduce heat and simmer for 20 minutes or until thickened. Add corn and heat through.
Open buns and place on plates; spoon beef mixture over top. Sprinkle with cheese.
