This flavourful slaw is a nice alternative to the more classic green cabbage version. Add the radishes just before serving, so they keep their colour and stay crisp.

In large bowl, whisk together vinegar, mustard, sugar, garlic, salt and pepper until sugar is dissolved, about 1 minute. Whisk in oil until combined.With vegetable peeler, slice carrots into paper-thin strips. Add to bowl along with cabbage and parsley; toss to coat. Cover and refrigerate for 2 hours. (Make-ahead: Refrigerate for up to 24 hours.) Stir in radishes.
