OK, we cheated a little: This recipe actually takes around 16 minutes to prepare, once you include the 30 to 60 seconds it takes to mix everything together. But these addictive sugarand- spice-crusted nuts are worth the extra minute. Pecans and walnuts, with their nooks and crannies, work best. The egg white is the secret to getting the seasonings to stick.

In bowl, whisk egg white until frothy; add nuts, brown sugar, salt, garlic powder and cayenne pepper. Stir until coated.Spread nuts on rimmed baking sheet; bake in 375ºF (190ºC) oven until nuts are glazed and sugar is caramelized, about 15 minutes.
Let cool on pan on rack. Break up any large clusters. (Make-ahead: Store in airtight container for up to 2 days.)
