Cut bread into 1-inch (2.5 cm) cubes to make about 12 cups (3 L). In large bowl, stir together bread, spinach, onions, cheese and ham. Spoon into greased 13- x 9-inch (3 L) glass baking dish.In bowl, whisk together eggs, milk, mustard, salt and pepper; pour over bread mixture and let stand for 20 minutes. (Make-ahead: Cover and refrigerate for up to 24 hours.)
Bake in 375°F (190°C) oven until puffed and golden, about 45 minutes.
