Stir together cumin, allspice, paprika, salt and pepper; rub all over pork chops.In nonstick skillet, heat oil over medium heat; cook pork chops, turning once, until just a hint of pink remains inside, 8 to 10 minutes. Transfer to plate; tent with foil.
Add onion to pan; cook over medium heat, stirring often, until softened and golden, about 8 minutes. Stir in vinegar and any accumulated juices from pork chops. Serve with pork chops.
Change it up - Spiced Lamb Chops with Golden Onions :Replace pork chops with lamb chops; cook, turning once, until medium-rare, 5 to 7 minutes.
