Method
Preheat oven to 400°F. Spray baking sheet with cooking spray.
In bowl, break up salmon with fork. Add yogurt, bread crumbs, egg, roasted red pepper, green onions and dill; season with salt and pepper. Mix well to obtain a thick and slightly sticky mixture. Using hands, form eight 3/4-inch thick patties and place them on prepared baking sheet. Lightly spray patties with cooking spray.
Bake, turning and lightly spraying with cooking spray halfway through cooking time, until croquettes are golden brown on both sides, about 25 minutes. Serve with lemon wedges and Express Tartar Sauce, and microgreens, if using.
Express Tartar Sauce
Sauce In bowl, combine 1/2 cup mayonnaise, 2 tbsp sweet relish, 1 tbsp drained and chopped capers and 1 tbsp lemon juice. Season with salt and pepper. Makes about 2/3 cup.
