Method
In saucepan, bring broth, 1/2 cup water and tomato to boil; reduce heat and simmer for 3 minutes. Return to boil; stir in tortellini. Boil until tortellini are floating and tender, about 3 minutes.Remove from heat; stir in lemon juice. Pack soup in vacuum bottle, and baguette and cheese in air- tight containers. Sprinkle Parmesan cheese over soup; eat with baguette slices.
Change it up:
Cheese Tortellini in Fresh Tomato sauce
Omit chicken broth and lemon juice. Cook tortellini according to package directions; drain. toss together tortellini; plum tomato, halved, seeded and diced; 2 tsp extra-virgin olive oil; 1 small clove garlic, minced; and 1/4 tsp dried italian herb seasoning. Pack tortellini mixture, baguette and Parmesan cheese as directed.
