In food processor, blend together Cheddar cheese, butter, Port, sage, mace, salt and cayenne pepper until smooth, scraping down side of bowl often.Scrape into pot, smooth top. Cover with plastic wrap and refrigerate for up to 2 weeks. Bring to room temperature to serve.
