This is a terrific addition to your recipe box. Serve the quesadillas as a main course accompanied by a side salad, or cut them into smaller wedges to make party appetizers. They're so delish you don't even need salsa!

For each quesadilla, place 1 of the tortillas on work surface; spread with one-quarter of the hot pepper jelly; sprinkle with 1/4 cup of the pork. Arrange one-quarter each of the mango, cheese and green onions over top. Cover with second tortilla.Heat nonstick skillet or grill pan over medium heat; cook quesadillas, in batches and turning once, until browned on both sides and cheese is melted, about 6 minutes.
Transfer quesadillas to cutting board; let stand for 2 minutes. Cut each into 6 wedges.
