Pizza lovers, rejoice! Here's a simple way to have your pie and eat it at school. This recipe is just a base. Improvise and build skewers based on your kids' favourite pizza toppings. (Plain chicken chunks are a tasty, lower-sodium alternative to pepperoni.)

Onto four 6-inch (15 cm) wooden skewers, alternately thread focaccia, pepperoni, tomatoes and mozzarella cheese. Pack skewers in airtight container.Change it up: Deluxe Pizza Skewers
Omit pepperoni, grape tomatoes and mozzarella cheese. Halve 4 white mushrooms. Brush small nonstick skillet with oil; saute mushrooms over medium-high heat until golden and tender, about 3 minutes. Let cool. Onto skewers, alternately thread focaccia, 8 balls mini bocconcini cheese, 8 chunks sweet red or green pepper and the mushrooms. Pack and serve as directed.
