This tidy version of a sloppy joe is perfect for small hands. Serve the extra sauce on the side for dipping. Kids with bigger appetites will want to eat two!

In bowl, stir together tomatoes, chili sauce, vinegar, 1/2 tsp each of the chili powder and paprika, 1/4 tsp of the pepper, salt and cornstarch.In separate bowl, mix together ground beef and remaining chili powder, paprika and pepper; mix in 3 tbsp of the tomato mixture. Form into 8 mini patties.
In large nonstick skillet, heat oil over medium-high heat; brown patties, turning once, about 6 minutes.
Pour in remaining tomato mixture and bring to boil; reduce heat and simmer, turning patties to coat, until sauce is thickened and instant-read thermometer inserted sideways into a few patties registers 160ºF (71ºC), about 8 minutes. Serve on buns with sauce.
