Method
In bowl, pour boiling water over dried mushrooms; let stand for 20 minutes. Strain, reserving liquid; set aside.
In saucepan, melt butter over medium heat; fry onion, garlic, salt and pepper until tender.
Stir in reserved mushrooms and barley. Stir in chicken stock, water, and reserved mushroom liquid. Bring to boil; reduce heat to medium-low, cover and simmer until barley is tender and liquid is absorbed, about 40 minutes. Let stand, covered, for 5 minutes. Add fresh parsley.
