Using small scoop or tablespoon, scoop ice cream into twenty-four 1-inch (2.5 cm) balls. Freeze on parchment paper-lined baking sheet for 2 hours.Spread crushed cookies, almonds, sprinkles and coconut on 4 small plates. Working with a few at a time, roll 6 balls in each topping. Return to baking sheet and freeze for 30 minutes. (Make-ahead: Freeze in airtight container for up to 5 days.) Serve in paper candy cups. Makes 24 pieces.
