Method
Roasted Spiced Cauliflower: Toss together cauliflower, oil, cumin, coriander, salt and pepper. Arrange in single layer on parchment paper–lined baking sheet; bake in 425 F (220 C) oven for 15 minutes.Meanwhile, whisk together honey, lime juice, mustard, garlic and paprika; set aside. Sprinkle chicken with salt and pepper. In nonstick skillet, heat oil over medium heat; cook chicken, turning once, until golden all over, about 8 minutes. Brush half of the honey mixture over chicken; cook, turning once, until glossy and coated, about 2 minutes. Move cauliflower to one side of baking sheet; add chicken, brushing with remaining glaze.
Bake until cauliflower is tender and browned, and juices run clear when chicken is pierced, about 10 minutes. Sprinkle parsley over cauliflower; serve with chicken.
