Method
In large saucepan of salted boiling water, cook green beans until slightly softened, about 2 minutes. Drain well; let cool for a few minutes then slice beans lengthwise. Set aside.
Preheat oven to 400°F. On parchment paper-lined baking sheet, gently unroll sheet of pastry, then prick surface all over with fork. Spread ricotta over pastry, then spread Dijon mustard over top, leaving a small border around edges. Sprinkle with thyme.
In bowl, stir Cheddar with reserved green beans; season with salt and pepper. Top pastry with green bean mixture.
Bake until pie is golden brown, 25 to 30 minutes. Let cool for 2 to 3 minutes, then drizzle with honey.
Change it up
You can replace the ricotta with softened goat cheese.
