Method
In pot of boiling water, cook beans for 45 minutes or until tender; drain.
In saucepan, heat oil over medium heat; cook garlic, onion, oregano and cumin, stirring often, for 8 minutes or until golden.
Add tomatoes; cook for 10 minutes. Add beans, 1/2 cup (125 mL) water, salt and pepper; cook, stirring, for 10 minutes or until coated. Add lemon rind and juice.
