Cut baguette in half lengthwise; cut into 1-inch (2.5 cm) chunks. Alternately skewer 3 pieces of bread and 2 tomatoes onto each of 12 metal or soaked wooden skewers.In small bowl, combine oil, garlic, paprika and herb seasoning; brush over skewers. (Make-ahead: Cover and set aside for up to 2 hours.)
Place skewers on greased grill over medium heat; close lid and grill, turning once, until golden and crisp, about 8 minutes. Sprinkle with cheese (if using).
