Broth In large saucepan over medium-low heat, simmer broth, ginger, garlic, onion, star anise, coriander seeds, cinnamon stick, fish sauce, if using, and sugar for 45 minutes. Strain through sieve, discard spices and return broth to saucepan over medium-low heat.
Pho Soak noodles in large bowl of hot water for 10 to 15 minutes. Meanwhile, add mushrooms to broth; simmer for 15 minutes. In bowl, combine onion, bean sprouts, celery, green onions, mint, cilantro and basil. Drain noodles; divide among four bowls. Pour broth into bowls. Top each bowl with prepared vegetable and herb mixture. Serve with lime wedges and sriracha.
