Method
Yogurt-Lime Sauce In small bowl, whisk together yogurt, lime zest and juice, and cayenne pepper; season with salt. Set aside in refrigerator.
Crispy Tofu Preheat air fryer to 400°F. Pat tofu dry with clean tea towel. Squeeze tofu to remove as much liquid as possible. In large bowl, using hands, break tofu into 1/3-inch pieces (approx). Add soy sauce, fish sauce, sambal oelek and rice vinegar. Stir gently until tofu is well coated.
Add cornstarch to bowl with tofu, tossing to coat well; transfer to air fryer basket. Cook, stirring halfway through cooking time, for 14 minutes. Transfer to plate.
Assembly Meanwhile, in small bowl, mix avocados with jalapeño and lime juice; season with salt and pepper. Set aside. Reduce air fryer temperature to 200°F. Wrap tortillas in damp parchment paper and cook for about 5 minutes.
Fill tortillas with tofu, guacamole, radishes and cilantro, and pickled red onions, if using. Drizzle with Yogurt Lime Sauce.
