Chicken salad doesn't always inspire, but this one, dotted with crumbled blue cheese and crisp bacon, certainly does. Try it on your favourite bread as a sandwich, or serve a scoop on salad for a gourmet light supper.

In skillet, cook bacon over medium heat until slightly crisp, about 5 minutes. Drain on paper towel–lined plate; chop.Stir together chicken, bacon, tomatoes, blue cheese and mayonnaise until combined.
Divide chicken salad among tortillas; top with arugula. Fold in sides; roll up.
