Citrus add freshness to this caffeine-free tea. Serve with chamomile flowers or lime ice cubes (see “Nice Ice,” below).

Method

In large heatproof measure or bowl, steep tea in 8 cups (2 L) boiling water for 4 minutes. Discard bags.

Meanwhile, using vegetable peeler and avoiding white pith, remove 1 long strip rind each from lemon, lime and orange. Squeeze juice from fruit, adding enough water to make 1 cup (250 mL).

In saucepan, bring sugar, rind and juice to boil. Reduce heat to medium-low; simmer to combine flavours, about 5 minutes. Add to tea; let cool to room temperature, about 30 minutes. Refrigerate until cold, about 2 hours.

Strain through cheesecloth-lined sieve into pitcher, pressing solids only gently so beverage remains clear. Serve with ice cubes.
