In bowl, mix together pork, pancetta, green onions, apple, coriander, salt, sage, pepper and 1 tbsp (15 mL) water. Form by 1/4 cupfuls into patties. (Make ahead: Refrigerate in airtight container for up to 24 hours.)In cast-iron or regular skillet, heat vegetable oil over medium-high heat; fry patties, in batches and turning once, until browned, about 5 minutes. Transfer to baking sheet.
Bake patties in 375°F (190°C) oven until digital rapid-read thermometer inserted into centre of patty reads 160°F (71°C), about 10 minutes.
