In blender or food processor, purée chunk light tuna, mayonnaise, grated lemon zest, lemon juice, capers, and anchovy fillets, until smooth (if necessary, add water, 1 tbsp at a time, until desired consistency is reached).
Season with salt and pepper. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days.)
