Ingredients
Method
In large bowl, using whisk, beat eggs lightly. Add spaghetti, marinara sauce, 1/4 cup of the mozzarella, and basil; toss to coat pasta evenly. Season with salt and pepper.
In 10-inch cast-iron skillet, heat oil over medium heat. Distribute spaghetti mixture evenly in skillet and press to even surface. Cook until bottom and sides of frittata are set.
Preheat oven to 400°F. Sprinkle remaining mozzarella over spaghetti and bake until topping is golden and bubbling, 8 to 10 minutes. Let cool 5 minutes before serving. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days or frozen up to 2 months.)
TEST KITCHEN TIP
This recipe can be tailored to your preferences or to whatever you have on hand. You can replace the marinara sauce with pesto or cream sauce, and even add pancetta or ham, wilted spinach, slightly soft cherry tomatoes or leftover cooked vegetables.
