Method
Season beef with salt and pepper. In large skillet, heat oil over high heat. Sear beef for 3 to 4 minutes on each side. Transfer to slow cooker.
In same skillet, add onion and carrots; cook, stirring often, for 5 minutes. Add garlic, tomato paste, oregano, basil and hot pepper flakes; cook, stirring often, for 2 minutes. Stir in wine, scraping up browned bits from bottom of skillet with wooden spoon. Cook for 2 minutes; add to slow cooker. Add tomatoes (including juices), mushrooms and olives; season with salt and pepper. Cover and cook on Low for 8 hours. Remove bones and lightly shred beef with fork. Serve over egg noodles, sprinkled with parsley and Parmesan, if using.
