Method

Preheat oven to 450°F. In large ovenproof skillet, heat 1 tbsp of the oil over high heat. Add chicken pieces and sear each side, 4 to 6 minutes. Season with salt and pepper; set aside on plate.

Heat remaining oil in skillet. Add onion and garlic; cook, stirring often, for 1 minute. Stir in wine to deglaze pan; cook until liquid has almost completely evaporated, 2 to 3 minutes. Whisk in flour; cook, whisking constantly, for 1 minute. Stir in chicken broth; bring to boil, stirring constantly. Add reserved chicken, the artichokes, oregano, bay leaves and lemon zest and juice. Mix gently.

Bake on top rack of oven until chicken reaches internal temperature of 165°F, 12 to 15 minutes. Sprinkle with feta and place under broiler for a few minutes, if desired. Sprinkle with parsley and serve over buttered pasta, if using.
