Method
In large skillet, heat oil over medium-high heat. Add onion and cook, stirring often, until softened, about 5 minutes. Add chorizo and cook, stirring often, until starting to brown, about 5 minutes. Add wine, thyme and bay leaf; continue cooking, scraping bottom of pan with wooden spoon, until wine has almost completely evaporated.
Add chickpeas and tomatoes. Bring to boil. Reduce heat and simmer until mixture has thickened, about 5 minutes. Remove and discard bay leaf.
Season with salt and pepper. Sprinkle with parsley.
