Method

Preheat air fryer to 390°F. Season salmon with salt and pepper. Spray air-fryer basket with cooking spray; place salmon in basket. Cook until salmon flakes easily when tested with fork, 8 to 10 minutes. Transfer to plate. Brush with hoisin sauce and maple syrup. Using fork, break up salmon into small pieces.

Meanwhile, in large bowl, combine rice, mayonnaise, soy sauce, sesame seeds, sriracha, rice vinegar and sesame oil.

Divide rice mixture among bowls. Top each bowl with salmon pieces and desired toppings. Serve with seaweed.

You can also cook the salmon in the oven under the broiler for 12 minutes.
